This is what I consider to be the 'real' start of Gatineau Park: the entry onto the Park-only portion of the Gatineau Parkway at Gamelin Road. It is at this point onwards that I (and virtually all road cyclists that I know) switch from the bike pathway onto the Parkway itself. The road's smoothness, extra width, and nice grassy verge with no curbs make this a good choice at this point.
